Veggie Burgers

Ingredients: - 1 can of black beans (drained and rinsed) - 1/2 cup cooked quinoa - 1/2 cup breadcrumbs - 1/2 onion, diced - 1 garlic clove, minced - 1 egg (or substitute with flaxseed) - 1 tablespoon soy sauce - 1 tablespoon olive oil - 1/2 teaspoon cumin - 1/4 teaspoon paprika - Salt and pepper to taste Instructions: 1. Preheat your oven to 375°F. 2. In a bowl, mash the black beans with a fork or a potato masher until they are well mashed, but still have some texture. 3. Add the quinoa, breadcrumbs, onion, garlic, egg, soy sauce, olive oil, cumin, paprika, salt, and pepper to the mashed black beans. Mix everything together until it is well combined. 4. Shape the mixture into patties, about 1/2 inch thick and 3 inches wide. 5. Place the patties on a baking sheet lined with parchment paper. 6. Bake the patties for about 20-25 minutes, flipping them halfway through, until they are golden brown and crispy on both sides. 7. Serve the veggie burgers on buns with your favorite toppings, such as lettuce, tomato, onion, cheese, and condiments. Enjoy your homemade veggie burgers!
