Gluten Free Banana Bread

Ingredients: - 3 ripe bananas, mashed - 1/3 cup melted butter or vegetable oil - 1 teaspoon vanilla extract - 2 eggs - 1/4 cup milk or non-dairy milk - 2 cups gluten-free flour blend (can be found at most grocery stores) - 1 teaspoon baking soda - 1/2 teaspoon salt - 1/2 teaspoon ground cinnamon - 1/2 cup chopped nuts (optional) Instructions: 1. Preheat your oven to 350°F (175°C). 2. Grease a 9x5 inch loaf pan with cooking spray. 3. In a large mixing bowl, combine the mashed bananas, melted butter or oil, vanilla extract, eggs, and milk. 4. In a separate bowl, whisk together the gluten-free flour blend, baking soda, salt, and cinnamon. 5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. 6. Fold in the chopped nuts, if using. 7. Pour the batter into the prepared loaf pan. 8. Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean. 9.
